Wholesome Ayurvedic Christmas Beetroot Vegie Patties Recipe

Ingredients

  • 1.5 cups besan flour (chickpea flour)
  • 1 cup brown rice flour
  • 1 cup water
  • 3 medium grated beetroots
  • 2 medium grated zucchinis

Instructions

  • Creation Process:
    1) Using your food processor or a hand grater, grate your beetroot, carrot and zucchini, then mix together with your hands in a large mixing bowl.
    2) Add 1.5 tbsp of cumin powder, 1.5 tbsp of coriander powder and 1 flat tsp of turmeric powder and mix through the grated rainbow of vegies in your bowl (…the colours of beet, carrot & zucchini together are soooo pretty!)
    3) In a small separate bowl, add your 1.5 cups of besan flour (chickpea flour), 1 cup of water, a couple of pinches of sea salt, a few cracks of black pepper and your fresh coriander (or shallots) and stir using a whisk until you create a smooth/thick batter-like consistency. (Note, err on the side of less liquid here to start with, remembering that the vegies will make the batter even more moist also!)
    3) Combine the besan batter with the grated vegies in your large mixing bowl using a spatula OR if your like me and like to get up-close-and-personal with your food and super tactile, :) then with clean hands, put the spatula aside and give your mix a big juicy ‘massage’ to combine everything together until sticky and a good patty consistency.
    4)  Sprinkle in 1 cup of brown rice flour to help give a little extra substance and dryness to the wet patty mix so you can press the mix together in your hands into a round patty. (You want the mix to be moist, yet not too wet that you can’t form a pattie in your hands. If your mix is too wet, add a little extra rice flour until it forms the right consistency for you!)
    5) Melt some Ghee or Coconut oil in your pan and let the pan warm for 2-3 minutes.  Take a generous dollop of pattie mix in your hands and form a ball, then between your palms, flatten the ‘ball’ so it turns into a round juicy patty.  Place your patty in the pan and cook for 4-5 minutes on one side, then flip it over and repeat on the other side. Repeat this step until all of your patties are cooked!
    5) Voila!! You did it, your patty’s are now ready to be savoured, enjoyed and shared with those you love! Serve with your favourite Mango or Date chutney and or a dollop of Coconut yoghurt raita (coconut yoghurt mixed with chopped cucumber and mint!) and or any other delicious condiment that your heart (and tastebuds) desire! :)

Notes

Note: Feel free to add a little extra rice flour at the end as you need it to help the patty mix stay together. Some vegies are juicier than others and so you may need a little extra ‘dryness’ from the rice flour to get the right consistency.
